Quinoa Chickpea & Avocado Salad

 

This is a really good Quinoa Chickpea & Avocado Salad. It was so simple and fast to make & yet tastes great!

I’ve been looking for good Quinoa recipes. This one’s defiantly a keeper. I’m not usually fond of tomatoes, but mixed in with everything else in this salad, even they taste good. Maybe I’ll slice them smaller next time, but still really good. Yes, there will be a next time for this salad. You must try it.

Quinoa Chickpea & Avocado Salad

Ingredients:

  • 1 cup quartered grape tomatoes
  • 15 oz can garbanzo beans, rinsed and drained
  • 1 cup cooked quinoa
  • 2 tbsp red onion, minced
  • 2 tbsp cilantro, minced
  • 1 1/2 limes, juice of
  • kosher salt and fresh pepper, to taste
  • 1 cup diced cucumber
  • 4 oz diced avocado (1 medium hass)

Directions:

  • Combine all the ingredients except for avocado and cucumber,
  • season with salt and pepper to taste.
  • Keep refrigerated until ready to serve.
  • Just before serving,
  • add cucumber and avocado.
    Makes 5 cups.

    Quinoa chickpea and avocado salad…is it one cup cooked quinoa or one cup uncooked?

    I normally cook 1 cup quinoa with 2 cups water…is this the serving size? Or is it really one cup cooked?

      Hi Geri,

      I used one cup cooked for this one. However, I’ sure doubled would be just fine. Hope this helps 🙂
